From a falafel store \\ to a Kauai Food truck

At 14 I got my first job, running a busy falafel shop in the the crowded Mahane Yehuda market (if you meet my parents, this was all done after school). Here I learned about authentic falafel and other Middle Eastern cuisine. During my travels I came to, and fell in love with, Kauai. I saw a dearth of good fresh vegetarian and vegan food. That’s when I decided Kauai needed a food truck featuring the food I love with an Aloha twist.
